pickled watermelon rind (usually found in cubes)
sliced bacon (cut in thirds)

Partially cook the bacon in a pan, but do not brown. Wrap a piece of bacon around each piece of watermelon rind and secure with a toothpick. Arrange on a broiler pan. Cook under broiler till browned, turning once. Serve immediately. It is best to make 2-3 per person. My mom says this is great for cocktail parties.

A Spanish variation served at Xunta Tapas Bar in New York City is dates wrapped in bacon and broiled. It is just as delicious!
